what is the "cleric" equivalent of a "sorcerer"

 

That is, a divine magic specialist class. Functionally speaking that would be-- casting any known cleric/druid spells at any time so long as you have the 'castings' (on a 'per level' basis) left to do so.

 

I am not sure what to call this concept to distinguish from the standard cleric/druid: "shaman":) "(un)holyman";) "spiritualist":)

 

Would this even work in BG?

In 3.5E pen and paper there's a Favoured Soul, which is vaguely similar to what you describe. I think they have a limited spell list and gradually become more like Outsiders as they progress... Not feasible for BG2, though.
