Changing a store's name

There is a character in the game whose name is Rattell. He also runs a store, which has the title Rettel the Fence.

 

I could change both his name (as a character) and his dialogue where he introduces himself, to make them all consistent with Rettel, but it would probably be easier to change the store's name to Rattell the Fence--if I knew how to change store names. How is that done?
