For example, lets say I wanted the Mortuari kit to follow a different leveling progression, could I add an additional row and have the Mortuari kit follow this row? Link to comment

According to the admittedly fallible Baldur's Gate 2 manual, Warriors and Barbarians share the same experience progression. And as an aside, one could always create all the various changes in a custom xp progression by applying additional XP modifiers at varying levels. It'd be fairly simple to take the base class xp progression table for the kit, the final desired xp progression table for the kit and do the math to determine what multipliers are needed and at what points.
